Kief Rubbed Beer Can Chicken

With the ever-growing product availability stemming from Canada’s cannabis legalization, specialty materials couldn’t be easier to procure. No longer are large stockpiles of kief–the resinous trichomes on your bud–reserved for home growers and grinder guardians.

Kief shares many redeeming qualities with cannabis extracts, such as a supercharged potency, but requires very little processing. However, we won’t be smoking this potent pollen, we’ll be diving into grill season by seasoning a juicy-tender chicken to create a delicious kief rubbed beer can chicken.

Kief Rub

  • 1 gram of kief
  • 1 1/2 tablespoon of granulated garlic
  • 1 tablespoon of granulated onion
  • 1 tablespoon of chili powder
  • 1 tablespoon of chives
  • 1 tablespoon of smoked paprika
  • 1/2 teaspoon of cayenne pepper
  • 1 teaspoon of thyme
  • 1 1/2 tablespoon of sea salt
  • 1 teaspoon of black pepper

Don’t let this extensive spice list sway you away from this delicious dry rub. It’s as easy as combining all ingredients into a bowl and mixing until homogenous. What this will leave you with is a classic barbecue dry rub mix that can be applied to whatever you’d like, you even have the option to store it for a sunny day. Feel free to change the spice amounts to your desired liking, or even add and remove spices as you please!

Beer Can Chicken

Optional
brine:

  • 2-3 lemons, sliced
  • Handful of rosemary
  • Handful of peppercorns
  • 2-3 tablespoons of salt
  • Water

(Optional brine) Before you start cooking this chicken, feel free to put it in a large stockpot filled with water. Adding in these ingredients will create a delicious brine for your chicken, all you need to do is submerge it for 12 to 24 hours. Then it’s on to the recipe.

Beer can chicken:

  • 1 can of your favourite beer (label removed)
  • 1 beer can chicken kit (optional)

To begin the dry-rub process, begin by pulling up the skin above the chicken breasts. Taking your spice rub, apply generous amounts to the newly formed pocket under the skin. Spread the remaining spice rub all over the chicken, until you’ve used the remaining mix. If you have a beer can chicken kit, set up your beer can on it and place your chicken. If you don’t have the kit, simply put the beer can into the chicken. BBQ the chicken at 225°F for around an hour. Remove the beer can from the chicken, slice, and enjoy!
